Ingredients
  

For the Peppers

  • 4 Large Bell Peppers
  • 1 tbsp Olive Oil
  • Pinch of Salt

For the Filling

  • 1 cup Cooked Quinoa (or rice, if preferred)
  • 1 cup Ricotta Cheese
  • ½ cup Shredded Mozzarella Cheese
  • ¼ cup Grated Parmesan Cheese
  • 1 Small Zucchini (diced)
  • 1 Small Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • ½ cup Cherry Tomatoes (chopped)
  • 1 tbsp Cannabis-Infused Olive Oil
  • ½ tsp Dried Basil
  • ½ tsp Dried Oregano
  • ¼ tsp Black Pepper
  • Pinch Of Salt

For Topping

  • ¼ cup Mozzarella Cheese (for melting)
  • Fresh Basil or Parsley for Garnish

Instructions
 

  • Preheat Oven
    Set oven to 375°F (190°C). Lightly grease a baking dish.
  • Prepare the Peppers
    Slice the tops off the 4 Large Bell Peppers (keep them as “lids”). Remove seeds and membranes. Using a paring knife, carve Jack-O’-Lantern faces into the sides for a fun Halloween touch.

    Brush the insides lightly with 1 tbsp Olive Oil and a Pinch of Salt. Place upright in a baking dish and roast for 10 minutes to soften slightly. Remove and set aside.

    In a skillet, heat 1 tbsp Cannabis-Infused Olive Oil over medium heat. Sauté 1 Small Onion, 2 cloves Garlic, 1 Small Zucchini, and ½ cup Cherry Tomatoes for 4–5 minutes until softened. Remove from heat and cool slightly.
  • Mix It All Up
    In a large bowl, combine the sautéed vegetables with 1 cup Cooked Quinoa, 1 cup Ricotta Cheese, ½ cup Shredded Mozzarella Cheese, ¼ cup Grated Parmesan Cheese, ½ tsp Dried Basil, ½ tsp Dried Oregano, Pinch Of Salt, and ¼ tsp Black Pepper. Stir until evenly mixed.
  • Stuff the Peppers
    Spoon the filling into each carved pepper, packing it gently. Top with a sprinkle of mozzarella cheese and place the lids back on.
  • Bake
    Cover loosely with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
