Ingredients
  

  • 4 Large Russet Potatoes (peeled and quartered)
  • 2 tbsp Cannabutter
  • ¼ cup Milk (can substitute with plant-based milk)
  • 1 lb Ground Beef
  • 1 Diced Onion (medium, should be about 1/2 a cup)
  • 2 cloves Minced Garlic
  • 1 cup Diced Carrots
  • 1 cup Frozen Peas
  • 1 cup Frozen Corn
  • 2 tbsp Tomato Paste
  • 1 cup Beef Broth (can also use veggie broth)
  • 1 tsp Worcestershire Sauce
  • 1 tsp Dried Parsley
  • 1 tbsp Olive Oil
  • ½ tsp Salt
  • 1 tbsp Black Pepper

Instructions
 

  • Boil the Potatoes
    In a large pot, boil 4 Large Russet Potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with 2 tbsp Cannabutter, ¼ cup Milk, a pinch of salt and dash of pepper until creamy. Set aside.
  • Make the Pie Filling
    While the potatoes cook, heat 1 tbsp Olive Oil in a skillet over medium heat. Add 1 Diced Onion and 2 cloves Minced Garlic, sautéing until translucent. Add 1 lb Ground Beef and cook until browned. Stir in 1 cup Diced Carrots, 1 cup Frozen Peas, and 1 cup Frozen Corn. Cook for 5 minutes.
  • Add the Flavor
    Mix in 2 tbsp Tomato Paste, 1 cup Beef Broth, 1 tsp Worcestershire Sauce, 1 tsp Dried Parsley, ½ tsp Salt, and 1 tbsp Black Pepper to the filling. Simmer for 5-7 minutes until thickened.
  • Assemble Your Pie
    Preheat your oven to 400°F (200°C). Spread the filling evenly in your baking dish. Spoon mashed potatoes on top, smoothing with a fork. For extra flair, create ridges with the back of the fork to crisp up in the oven.
  • Bake
    Bake for 20 minutes, or until the top is golden and slightly crisp.

Notes

Vegan Swap — Use lentils or plant-based crumbles, swap the cannabutter for vegan cannabutter, and use soy sauce instead of worcestershire sauce to transform the dish into a vegan masterpiece.
