Ingredients
- 1 head bite-sized cauliflower florets
- ¾ cup all-purpose flour Use chickpea flour to remain gluten-free
- ¾ cup unsweetened plant-based milk e.g., almond, soy, oat
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp black pepper
- ½ cup hot sauce e.g., Frank's Redhot
- 1 tbsp butter vegan butter also works
- 1 tsp cannabis-infused ghee blend will result in 15mg THC per serving
- ½ cup raw cashews soaked 2 hours, drained
- 2 tsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp fresh dill or 1 tsp dried
Instructions
- Batter and BakePreheat oven to 450°F (230°C) and line a baking sheet with parchment.In a large bowl, whisk together the ¾ cup all-purpose flour, ¾ cup unsweetened plant-based milk, 1 tsp garlic powder, ½ tsp smoked paprika, ¼ tsp salt, and ¼ tsp black pepper until smooth.Toss 1 head bite-sized cauliflower florets in the batter until coated. Place in a single layer on the baking sheet.Bake for 20 minutes, flipping halfway through.
- Make the Infused Buffalo SauceIn a small saucepan, melt the 1 tbsp butter and ½ cup hot sauce together over low heat.Remove from heat and stir in the 1 tsp cannabis-infused ghee blend until fully combined. Avoid reheating after the THC is added.
- Toss and Bake AgainRemove cauliflower from oven and coat gently with the infused Buffalo sauce.Return to oven and bake for an additional 15–20 minutes, until crisp and slightly charred at the edges.
- Make the DipAdd all ranch ingredients to a blender or food processor. Blend until smooth.½ cup raw cashews2 tsp apple cider vinegar1 tbsp lemon juice1 tsp garlic powder1 tsp onion powder1 tbsp fresh dillAdjust consistency with extra water, if needed. Chill until ready to serve.
