Ingredients
  

  • 2 cups Rolled Oats
  • ½ cup Chopped Nuts (walnuts, pecans, or almonds)
  • ¼ cup Shredded Coconut (optional)
  • 1 tsp Ground Cinnamon
  • ¼ tsp Sea Salt
  • ¼ cup Cannabis-Infused Maple Syrup (you can find our recipe under the ingredient tab)
  • 2 tbsp Coconut Oil
  • 1 tsp Vanilla Extract
  • 2 cups Greek Yogurt (plain or vanilla)
  • 1 cup Fresh Blueberries
  • 1 cup Sliced Strawberries

Instructions
 

  • Make the Granola
    Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper. Combine 2 cups Rolled Oats, ½ cup Chopped Nuts, ¼ cup Shredded Coconut (if using), 1 tsp Ground Cinnamon, and ¼ tsp Sea Salt in a large bowl.
    In the small bowl, whisk together ¼ cup Cannabis-Infused Maple Syrup, 2 tbsp Coconut Oil, and 1 tsp Vanilla Extract in a separate bowl until smooth.
    Pour wet ingredients over the dry and stir well until everything is evenly coated.
  • Bake the Granola
    Spread the mixture evenly onto your baking sheet and bake for 20–25 minutes, stirring halfway through to ensure even toasting. Watch closely the last few minutes to prevent burning. The granola should be a golden brown when done.
    Cool completely before breaking into chunks and assembling the parfaits. the granola can also be stored in an airtight jar.
  • Assemble the Parfaits
    Layer 2 tablespoons of yogurt into the bottom of each glass or jar. Next, add a spoonful of blueberries and strawberries, then a layer of infused maple granola.
    Continue layering with yogurt, strawberries, blueberries, and more granola, until your jars are filled and all your ingredients are used.
    Top it off with a final sprinkle of granola and a few fresh berries.
  • Devour and Enjoy
    Chill or serve immediately. You can also drizzle a little extra infused syrup on top for a more elevated experience.

Notes

Add a Twist Stir a bit of lemon zest into your yogurt or toss your berries with a splash of lime juice for an extra burst of flavor.
Let it Chill Let parfaits sit in the fridge for an hour before serving if you prefer a softer, pudding-like texture.
