Equipment

  • 1 Mason Jar 473mL recommended
  • 1 Pressure Cooker e.g. Instant Pot
  • 1 Digital Scale Must be acurate to at least 1 gram
  • 1 Measuring Cup Should accomodate up to 250mL
  • 1 Cheesecloth Fold to ensure two layer filtration
  • 2 Oven Mitts
  • 2 Latex Gloves Optional, but recommended to keep your hands clean during straining
  • 1 Storage Container Ideally glass, as plastics leach into food products

Ingredients
  

  • cup Ghee
  • cup Light Olive Oil
  • 14 grams Cannabis Important Note: Re-weigh cannabis after decarboxylation. Cannabis loses weight during decarb due to moisture and CO₂ loss—this allows you to obtain a more accurate dose of active material in your infusion.
  • ½ tsp Sunflower Lecithin Powder

Instructions
 

  • Decarboxylate the Cannabis
    Grind your 14 grams Cannabis to a medium consistency (not too fine).
    Place it in a clean mason jar.
    Seal the jar finger-tight (not overtightened).
    Place upright in your pressure cooker water bath, with water level even with the flower inside the jar.
    Set to high pressure and cook for 45 minutes.
    Let pressure release naturally upon completion.
    Tip: Jars retain more terpenes and minimize odor. After cooling, weigh your decarbed cannabis. Document this for the infusion.
  • Prepare the Fat Base
    This steps should be taken while the decarboxylation process is taking place
    Combine in a measuring cup:
    ⅔ cup Ghee
    ⅓ cup Light Olive Oil
    ½ tsp Sunflower Lecithin Powder
    Warm gently and mix thoroughly until fully melted and uniform.
  • Infuse
    Once the decarbed cannabis has cooled slightly, weigh out your flower and return it to the mason jar.
    Pour the melted fat mixture into the jar and reseal finger-tight.
    Return the jar to the pressure cooker water bath with water at the same level.
    Run for another 45 minutes on high pressure.
    Let the pressure release naturally.
  • Strain and Capture
    Allow the jar to cool to a manageable temperature.
    Strain the mixture through 2 layers of cheesecloth into your final storage container.
    Gently press to extract the remaining oil—but avoid squeezing too forcefully to prevent plant matter contamination.
    Note that at this point, the liquid will be nearly quite dark, with a hint of green.
  • Solidify and Store
    Let sit at room temperature until fully solidified, then refrigerate or freeze.
    ❄️ Storage Notes:
    Ghee gives this infusion a long shelf life—several months in the fridge, up to a year in the freezer.
    The oil helps keep it smooth and spreadable, even when cold.

Notes

When solidifying, your product should transition through the following stages, beginning with a dark liquid, to a green spread once at frdige temperature, to more solid lighter green when frozen.
There you have it!  A long-lasting, spreadable, and potent infusion that can be used 1:1 in place of butter in any recipe. 
Yes, many approaches can be taken when making such infusions; however, I have found after years of doing so that this offers the best combination of effectiveness, time, and ease.
Pro Tip: Label and update your storage container with the total quantity of THC within your infusion.  When you then cook or bake with it, you can easily scale your usage to fit your desired dosing.
For a strain containing 20% THC, this recipe would result in roughly 1,800mg per cup.
