Equipment

  • 1 Baking Sheet
  • 1 Spoon (for scooping out potatoes)
  • 1 Set of Measuring Spoons
  • 1 Measuring Cup
  • 1 Small Skillet
  • 1 Pastry Brush
  • 1 Set of Oven Mitts

Ingredients

  • 3 Large Russet Potatoes
  • 2 tbsp Melted Cannabutter (adjust dose as needed)
  • 1 tbsp Butter
  • ½ cup Shredded Cheddar Cheese
  • 4 Strips Cooked Bacon (crumbled)
  • 2 tbsp Sour Cream
  • 2 tbsp Chopped Green Onions
  • Salt & Pepper to Taste

Instructions

  • Bake the Potatoes
Preheat oven to 400°F (200°C). Scrub 3 Large Russet Potatoes and prick a few times with a fork. Bake directly on the rack for about 50–60 minutes, or until fork-tender. Let cool for 10–15 minutes.
  • Scoop & Crisp
Cut each potato in half lengthwise. Carefully scoop out most of the insides, leaving about ¼ inch of potato attached to the skin. (Save the extra for mashed potatoes or soup!)
Place skins cut side up on a baking sheet.
  • Brush with Buttery Goodness
Mix 2 tbsp Melted Cannabutter and 1 tbsp Butter together. Brush the inside and edges of each skin with the butter blend. Sprinkle lightly with Salt & Pepper to Taste.
Return to the oven and bake for 10–12 minutes until golden and crispy.
  • Load Them Up
Remove from oven and distribute the ½ cup Shredded Cheddar Cheese and 4 Strips Cooked Bacon over the potato skins. Return to oven for 5 more minutes, or until cheese is melty and irresistible.
  • Top & Serve
Top each with 2 tbsp Sour Cream and 2 tbsp Chopped Green Onions split equally between each potato skin. Serve warm and enjoy the perfect mix of crunchy, creamy, and elevated.

Notes

Cheese Choice: Swap in pepper jack, smoked gouda, or hot honey cheddar for a new flavor twist
Spice It Up: Sprinkle with crushed red pepper, hot sauce, or smoked paprika
Meal-Prep Hack: Bake and crisp the skins ahead of time, then reheat with cheese and toppings before serving
These cannabis-infused potato skins are the kind of indulgent, savory snack that hits every comfort food craving while delivering a laid-back lift. Make a batch, pass a plate, and let the good vibes (and cheese) melt.
