Equipment
- 1 Blender
- 1 Popsicle Mold (8-slot mold)
- 8 Popsicle Sticks
- 1 Double Boiler (to infuse coconut cream, you can also use a small saucepan)
- 1 Measuring Cup
- 1 Fine Mesh Strainer
Ingredients
- 2 cups Mango Chunks (fresh or frozen)
- 2 cups Coconut Cream (full fat)
- 1 tsp Fresh Lime Juice
- 1 Pinch of Sea Salt
- 1-2 grams of Cannabis Flower (for a stronger infusion use two grams)
Instructions
- Infuse the Coconut CreamIn a small saucepan or double boiler, combine 1-2 grams of Cannabis Flower that has been decarbed and 2 cups Coconut Cream. Heat gently over low heat (160–180°F), stirring occasionally. Let it infuse for 45–60 minutes for a quick batch or up to 2 hours for maximum potency.
- Strain and Let CoolRemove from heat and strain the cream through a cheesecloth or mesh strainer and transfer the infused cream to a mason jar to cool off.
- Blend the BaseOnce the infused cream is cooled it's time to make the popsicles. Add 2 cups Mango Chunks, infused coconut cream, 1 tsp Fresh Lime Juice, and 1 Pinch of Sea Salt to a blender. Blend until smooth and creamy.
- Fill your MoldsPour the mixture evenly into the popsicle mold. Tap gently to remove air bubbles and insert the popsicle sticks.
- FreezePlace molds in the freezer for 6–8 hours or overnight until fully set. The hardest part is waiting now.
- Unmold and EnjoyTake the popsicles out of the mold. If need be, you can run warm water over the outside of the mold for 10–15 seconds to release the pops. Eat immediately or store in a sealed container to avoid freezer burn.
Notes
Flavor Add-Ins: Try blending in a few fresh mint leaves, a splash of pineapple juice, or swirl in passionfruit puree for an elevated tropical flavor.
Make It a Mocktail Pop: Add 1 tbsp fresh ginger juice or steeped hibiscus tea to make your popsicles taste like a tropical mocktail.
Storage Tip: Wrap popsicles in parchment and store in a zip bag to prevent freezer burn or sticking.
